Universal and exquisite

Roasted, boiled, fried or stewed, everyone loves potatoes at mealtime. They are such a versatile food that even the way they’re cut radically changes their essence: from being a valuable food for basic nutrition, absorbing all the flavour of a dish, to becoming a festive snack, often paired together with ham.

 

With four thousand varieties of potatoes worldwide, it’s difficult to choose the best, because under certain ultra-local growing conditions, they can be invincible. We can highlight three distinct Spanish denominations, each with its own quality certification: the PDO (protected designation of origin) small Papas Antiguas de Canarias, in contrast to the PGI (protected geographical indication) Prades potato, with its sweet taste and aroma of chestnuts and the creaminess of the PGI (protected geographical indication) Potato of Galicia.

 

Advice
  • One of the best ham pairings is with the roasted potato. The ham enhances its flavour and the steamy potato brings out the essence of the meadows revealed by the slice of ham.

 

  • Likewise the mashed potato made with ham fat gives a special flavour, along with the healthy oleic oils of the Iberian pig. Diced ham is the perfect final touch to this dish.
